Easy Tomato Bisque Recipie

It is soup season! I love soup! My children love soup. My oldest child, Bunny, 4 years old, LOVES tomato soup. It gets boring. I wanted to spice it up. Enter tomato bisque. I have 4 children. I do not have a whole ton of time to prepare dinner. I love simple, easy and healthy (ish) recipes. This tomato bisque soup is just that. Simple, easy and healthy (ish). Without further ado, the recipe.

This recipe feeds 8 people. It is easy to cut it in half.

Ingredients

2 cans of condensed tomato soup 10 ounces

2 cans full of water

1 cup of heavy whipping cream (you can also use half and half or whole milk. The heavy whipping cream makes this super creamy, which I love.)

10 medium sized tomatoes

2 tablespoons basil

2 tablespoons oregano

2 tablespoons parsley

This recipe is simple and easy. Incredibly simple. Take the 10 medium sized tomatoes and puree them in a blender. More chunks, less chunks, it is up to you. Combine the pureed tomatoes, soup, water and spices in a large sauce pan. Stir occasionally. Bring to a boil, reduce heat to medium low, add the whipping cream. Stir until combined. Reduce heat to low and let simmer for a minute or two. Remove from heat and enjoy! You can add more spices, less spices. Make it yours! We love to add a ton of croutons to our tomato bisque around here. Easy, simple and delicious.
